1 pound of shrimp, peeled and deveined
1 can (13.5 oz) of coconut milk
½ cup of all-purpose flour
1 cup of unsweetened shredded coconut
2 large eggs
1 cup of panko breadcrumbs
1 teaspoon of salt
½ teaspoon of pepper
Vegetable oil for frying
½ cup of sweet chili sauce
Instructions
Start by rinsing the shrimp under cold water. Pat them dry thoroughly with paper towels.
Create a breading station with three shallow dishes: flour mixed with salt and pepper, whisked eggs, and a combination of shredded coconut and panko breadcrumbs.
