2 pounds of baby potatoes
6 cloves of garlic
1/4 cup of olive oil
1/2 cup of grated Parmesan cheese
1/4 cup of fresh parsley, chopped
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
Preheat your oven to 450°F (230°C). Rinse the baby potatoes and place them in a large pot. Cover with cold water, add a pinch of salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes.
Drain the potatoes and let them cool slightly. Smash each potato using a sturdy glass or potato masher until flattened but intact.
Spread the smashed potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with minced garlic, salt, pepper, and half of the grated Parmesan cheese.
