1 pound of medium-sized carrots (preferably organic for enhanced flavor)
2 tablespoons of olive oil (you can substitute with avocado oil for a different flavor profile)
1 teaspoon of sea salt
1/2 teaspoon of black pepper
1 teaspoon of garlic powder (optional for added depth)
Fresh herbs like parsley or thyme for garnish (optional)
Instructions
Start by washing the carrots thoroughly to remove any dirt or impurities. Peel them if desired, but leaving the skin on can add extra nutrients and texture. Cut the carrots into halves or thirds, depending on their size.
In a large pot, bring water to a boil and add the carrot pieces. Boil them for 10-15 minutes until they are fork-tender but still slightly firm.
Using a potato masher or the bottom of a glass, gently smash each carrot piece until they’re flattened but not completely broken apart.
