  • 3 tablespoons of olive oil

  • ½ teaspoon of black pepper
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • ¼ cup of fresh parsley, chopped (optional)

  • Instructions

  • Start by washing the carrots thoroughly to remove any dirt. Peel them if desired, but leaving the skin on can add extra nutrients and texture. Cut the carrots into halves or thirds to ensure even cooking.
  • In a large pot, bring salted water to a boil. Carefully add the carrot pieces and let them cook for about 10-15 minutes, or until they are fork-tender but not mushy.
  • Once the carrots are cooked, drain them in a colander and let them cool for a few minutes. Pat them dry with a clean kitchen towel or paper towel to remove excess moisture.
  • On a parchment-lined baking sheet, carefully place the dried carrots. Using the bottom of a sturdy glass or a potato masher, gently smash each carrot piece until it flattens slightly but remains intact.
  • Drizzle the smashed carrots with olive oil and sprinkle with sea salt, black pepper, garlic powder, and paprika. Toss gently to coat. Place them in a preheated oven at 425°F (220°C) and bake for about 15-20 minutes, flipping halfway through.
  • Once done, remove the crispy smashed carrots from the oven, and if desired, sprinkle them with fresh parsley or other herbs. Serve immediately.
