2 lbs of baby potatoes
1/4 cup of olive oil
1 tsp of salt
1/2 tsp of black pepper
1 tbsp of fresh rosemary, chopped
1 tsp of garlic powder
1/4 cup of grated Parmesan cheese
Instructions
Start by rinsing the baby potatoes under cold water. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Reduce the heat and let them simmer for about 15-20 minutes, or until fork-tender.
While the potatoes are boiling, preheat your oven to 425°F (220°C).
Once cooked, drain the potatoes and let them cool slightly. Line a baking sheet with parchment paper. Place the potatoes on the sheet and use the bottom of a glass or a potato masher to gently crush each potato until they are about half an inch thick.
Drizzle olive oil over the smashed potatoes. Sprinkle the salt, black pepper, garlic powder, and chopped rosemary evenly over the tops.
Transfer the baking sheet to the preheated oven and bake for approximately 20-25 minutes or until golden brown and crispy, flipping halfway through.
Sprinkle grated Parmesan cheese onto the potatoes during the last 5 minutes of baking to melt and brown the cheese slightly.
Once done, remove the baking sheet from the oven and allow the potatoes to cool slightly before serving.
