  • 1/4 cup of grated Parmesan cheese

  • Instructions

  • Start by rinsing the baby potatoes under cold water. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Reduce the heat and let them simmer for about 15-20 minutes, or until fork-tender.
  • While the potatoes are boiling, preheat your oven to 425°F (220°C).
  • Once cooked, drain the potatoes and let them cool slightly. Line a baking sheet with parchment paper. Place the potatoes on the sheet and use the bottom of a glass or a potato masher to gently crush each potato until they are about half an inch thick.
  • Drizzle olive oil over the smashed potatoes. Sprinkle the salt, black pepper, garlic powder, and chopped rosemary evenly over the tops.
  • Transfer the baking sheet to the preheated oven and bake for approximately 20-25 minutes or until golden brown and crispy, flipping halfway through.
  • Sprinkle grated Parmesan cheese onto the potatoes during the last 5 minutes of baking to melt and brown the cheese slightly.
  • Once done, remove the baking sheet from the oven and allow the potatoes to cool slightly before serving.
