4 boneless, skinless chicken breasts
1 pound of baby potatoes, halved
1 cup of chicken broth
1 cup of heavy cream or Greek yogurt
1 cup of Parmesan cheese, grated
4 cloves of garlic, minced
2 tablespoons of Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Start by trimming any excess fat from your chicken breasts. Rinse the baby potatoes and halve them to ensure they cook evenly.
Place the chicken breasts in the bottom of the crockpot. Add the halved baby potatoes around the chicken. Pour in the chicken broth and heavy cream, followed by the minced garlic and Italian seasoning. Season with salt and pepper to taste.
Sprinkle the grated Parmesan cheese generously over the top.
Cover the crockpot and set it to cook for 6-7 hours on low or 4 hours on high.
Once cooked, carefully remove the chicken to slice or shred. Stir the sauce before serving and top with fresh parsley.
