  • Start by trimming any excess fat from your chicken breasts. Rinse the baby potatoes and halve them to ensure they cook evenly.
  • Place the chicken breasts in the bottom of the crockpot. Add the halved baby potatoes around the chicken. Pour in the chicken broth and heavy cream, followed by the minced garlic and Italian seasoning. Season with salt and pepper to taste.
  • Sprinkle the grated Parmesan cheese generously over the top.
  • Cover the crockpot and set it to cook for 6-7 hours on low or 4 hours on high.
