1 ½ cups chocolate graham cracker crumbs
½ cup unsalted butter, melted
2 tablespoons sugar
24 oz cream cheese, softened
1 cup sugar
1 teaspoon vanilla extract
3 large eggs
½ cup sour cream
½ cup cocoa powder
1 cup cherry pie filling
2 oz dark chocolate, shaved for garnish
Instructions
Preheat your oven to 325°F (163°C). Combine chocolate graham cracker crumbs, melted butter, and sugar in a bowl until it resembles wet sand. Press into the bottom of a 9-inch springform pan.
Beat softened cream cheese and sugar until smooth. Gradually add vanilla extract, eggs, sour cream, and cocoa powder. Mix until well combined.
Pour the filling over the crust and smooth the top. Bake for 50 minutes until edges are set, then turn off the oven and cool for an hour inside.
Allow to cool to room temperature, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
