2 pounds of ground beef or turkey
1 medium bell pepper, diced
4 cloves of garlic, minced
2 tablespoons of chili powder
1 tablespoon of cumin
1 can (28 oz) of crushed tomatoes
1 can (4 oz) of green chilies
1 cup of beef broth
2 tablespoons of olive oil
Salt & pepper to taste
Instructions
In a large skillet, heat olive oil over medium heat. Add the ground meat and cook until browned, about 5-7 minutes. Break it into small pieces for even cooking.
Add diced bell pepper and minced garlic to the skillet. Sauté for another 3-4 minutes.
Transfer the cooked meat and vegetables to your crock pot. Add chili powder, cumin, crushed tomatoes, green chilies, and beef broth. Stir well.
Cover and set to cook on low for 6-8 hours or high for 4-6 hours.
Once cooked, check seasoning and adjust with salt and pepper. Garnish if desired.
