Ingredients
Scale
4 chicken breasts (about 2 lbs)
2 cups of corn (frozen or fresh)
1 red bell pepper, diced
½ cup of green onions, chopped
1 can (15 oz) of black beans, rinsed and drained
1 cup of chicken broth
½ cup of mayonnaise
2 tsp of chili powder
3 tbsp of lime juice
1 cup of cheddar cheese, shredded
¼ cup of cilantro, chopped
Instructions
Start by gathering all your ingredients. Rinse and drain the black beans, chop the red bell pepper, green onions, and cilantro, and cut the chicken into convenient pieces if preferred.
Place the chicken breasts at the bottom of the slow cooker. Next, add the corn, bell pepper, black beans, chopped green onions, and the seasonings—chili powder, lime juice, and chicken broth—over the chicken.
In a mixing bowl, combine the mayonnaise and cheddar cheese to create a creamy mixture.
Cover the slow cooker and set it to low heat for about 6-7 hours or high heat for 3-4 hours.
Once cooked, shred the chicken with two forks and mix it with the other ingredients. Then, add in the creamy dressing, folding gently.
Garnish with additional chopped green onions and cilantro before serving, and sprinkle extra cheese on top if desired.
