500g bread flour or a mix of all-purpose and whole wheat flour
350g filtered or bottled water
100g active sourdough starter
10g sea salt or kosher salt

Mix together flour, water, and sourdough starter; rest for 30 minutes.
Add salt to the dough and incorporate gently.
Place dough in a warm environment to rise for 4 to 6 hours, performing stretch and folds every 30 minutes.
Turn dough onto a lightly floured surface, shape it, and rest for 20-30 minutes.
Place shaped dough in a proofing basket lined with cloth for 1 to 2 hours.
Preheat oven and Dutch oven to 450°F (232°C).
Score the top of the dough and place it in the Dutch oven.
Bake for 30-45 minutes until crusty and golden.
Cool on a wire rack completely before slicing.
