1 tablespoon olive oil
1 medium onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
6 cups chicken broth
2 cups cooked chicken, shredded
1 teaspoon dried thyme
1 bay leaf
8 ounces egg noodles
Salt and pepper to taste
1 tablespoon fresh parsley, chopped
Instructions
Heat the olive oil over medium heat in a large pot. Add the diced onion, sliced carrots, and chopped celery. Sauté for about 5 minutes until the vegetables are softened.
Stir in the minced garlic and cook for an additional minute. Pour in the chicken broth and raise the heat to bring it to a boil.
Once boiling, add the shredded chicken, thyme, bay leaf, and season with salt and pepper. Stir and let it simmer for 5 minutes.
Add the egg noodles to the pot and cook according to package instructions until al dente.
Remove the bay leaf and stir in fresh parsley. Taste and adjust seasoning as needed.
