8 oz of sliced mushrooms
4 cloves of minced garlic
2 cups of almond milk
¼ tsp of freshly grated nutmeg
1 cup of grated Parmesan cheese
1 tsp of Italian seasoning
Salt to taste
8 oz of pasta (your choice)
Begin by washing and slicing the mushrooms. Mince the garlic and gather all your ingredients so everything is ready to go.
In a large skillet over medium heat, add your sliced mushrooms. Sauté them for around 5-7 minutes until they are golden brown.
Once the mushrooms are beautifully sautéed, add the minced garlic. Cook for an additional 1-2 minutes until fragrant.
Pour in the almond milk, and bring the mixture to a simmer. Heat for about 3-5 minutes but do not let it boil.
Add the freshly grated nutmeg and Italian seasoning. Stir well and let it simmer for another 2-3 minutes.
Reduce the heat to low and gradually add the grated Parmesan cheese while stirring continuously.
Once the sauce has reached a creamy consistency, taste and adjust the seasoning with salt if needed. Combine with your cooked pasta.
Plate your Alfredo pasta, and for an extra touch, sprinkle additional Parmesan cheese and fresh herbs on top.
