2 teaspoons of cream of tartar
1/4 teaspoon of salt
1 cup (softened) of unsalted butter
1 1/2 cups of granulated sugar
1/2 cup of brown sugar
2 large eggs
2 teaspoons of vanilla extract
1 tablespoon of cinnamon (for rolling)
Instructions
Step 1: Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy—approximately 2-3 minutes.
Step 2: Add the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and continue mixing until combined.
Step 3: In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. Gradually add the dry ingredients to the wet mixture, stir until just combined.
Step 4: Cover your mixing bowl with plastic wrap and refrigerate for at least 30 minutes.
Step 5: In a small bowl, mix the 1 tablespoon of cinnamon with 2 tablespoons of sugar. Roll chilled dough into balls and coat in cinnamon-sugar mixture.
Step 6: Place the dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes until edges are set but centers are slightly soft.
Step 7: Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack.
