  • 8 cups low-sodium chicken broth
  • 2 cups egg noodles

  • 3 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

  • Instructions

  • In a large pot, heat olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes. Remove and set aside to cool.
  • In the same pot, add diced onions, minced garlic, sliced carrots, and celery. Sauté until the vegetables are softened, about 7 minutes.
