2 pounds of boneless, skinless chicken breasts
1 pound of frozen cheese tortellini
4 cups of chicken broth
1 cup of heavy cream
1 cup of frozen peas
4 cloves of minced garlic
2 teaspoons of Italian seasoning
Salt and pepper to taste
½ cup of grated Parmesan cheese
Instructions
Place the boneless chicken breasts in the CrockPot. Sprinkle with salt, pepper, and half of the Italian seasoning.
Pour in the chicken broth and minced garlic over the seasoned chicken.
Cover the CrockPot and set it on low for 4-6 hours or high for 2-3 hours.
Once the cooking time is up, carefully remove the chicken from the pot and shred it using two forks.
Return the shredded chicken to the pot and stir in the heavy cream, frozen peas, and the remaining Italian seasoning. Let simmer on high for an additional 15-20 minutes.
Gently fold in the frozen tortellini and allow it to cook for about 5-10 minutes until tender.
Stir in the grated Parmesan cheese before serving.
