2 lbs of boneless chicken thighs (or breast for a leaner option)
1 can (15 oz) of diced tomatoes
1 onion, chopped
3 cloves garlic, minced
1 bell pepper, sliced (any color)
1 cup of corn (fresh or frozen)
1 cup of black beans, drained and rinsed
2 tsp cumin
Salt and pepper, to taste
Fresh cilantro for garnish
Chop the onion and bell pepper, then mince the garlic. Prepare all ingredients.
Layer the chicken thighs at the bottom of the crockpot.
Add the chopped onion, minced garlic, sliced bell pepper, corn, and black beans, and sprinkle cumin, salt, and pepper.
