Ingredients

  • 8 oz of Spaghetti or Whole Wheat Pasta
  • 2 boneless, skinless Chicken Breasts
  • 2 tbsp of Olive Oil
  • 4 cloves of Garlic, minced
  • ½ cup of Parmesan Cheese, grated
  • 1 cup of Cherry Tomatoes, halved
  • 2 cups of Fresh Spinach
  • Salt and Pepper to taste

  • Instructions

  • Boil a pot of salted water and cook the spaghetti or whole wheat pasta according to package instructions until al dente. Save about a cup of pasta water for later, drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (75°C). Remove and let rest.
  • In the same skillet, add minced garlic and cherry tomatoes. Sauté for about 2 minutes until softened and fragrant.
  • Slice the cooked chicken into strips and return to the skillet. Stir in the cooked pasta, spinach, and reserved pasta water until desired consistency is achieved. Mix in Parmesan cheese as desired.
  • Make final seasoning adjustments, adding red pepper flakes or extra herbs if desired.
  • Serve hot, garnished with additional Parmesan cheese and fresh herbs.
