1 lb (450g) of beef shank or brisket
6 cups of beef broth
3 tbsp of soy sauce
2 tbsp of gochugaru (Korean chili flakes)
4 cloves of garlic, minced
1-inch piece of ginger, grated
3 green onions, chopped
2 carrots, sliced
1 daikon radish, sliced
1 tbsp of sesame oil
Salt and pepper to taste
Cut the beef into bite-sized pieces and season with a pinch of salt and pepper.
In a large pot, heat the sesame oil over medium heat, add the minced garlic and grated ginger, and sauté until fragrant, about 2 minutes.
Add the seasoned beef into the pot and brown it on all sides for approximately 5-7 minutes.
Pour in the beef broth and soy sauce, stirring well to combine. Bring to a boil, then reduce heat to low and let it simmer.
Add the sliced carrots, daikon radish, and most of the green onions, reserving some for garnish.
Mix in the gochugaru to taste and let the soup simmer for an additional 30-40 minutes.
