  • 1 lb (450g) of beef shank or brisket
  • 6 cups of beef broth
  • 3 tbsp of soy sauce
  • 2 tbsp of gochugaru (Korean chili flakes)
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 3 green onions, chopped
  • 2 carrots, sliced
  • 1 daikon radish, sliced
  • 1 tbsp of sesame oil
  • Salt and pepper to taste

  • Instructions

  • Cut the beef into bite-sized pieces and season with a pinch of salt and pepper.
  • In a large pot, heat the sesame oil over medium heat, add the minced garlic and grated ginger, and sauté until fragrant, about 2 minutes.
  • Add the seasoned beef into the pot and brown it on all sides for approximately 5-7 minutes.
  • Pour in the beef broth and soy sauce, stirring well to combine. Bring to a boil, then reduce heat to low and let it simmer.
  • Add the sliced carrots, daikon radish, and most of the green onions, reserving some for garnish.
  • Mix in the gochugaru to taste and let the soup simmer for an additional 30-40 minutes.
