  • 4 pieces (about 1.5 lbs) of boneless chicken breasts
  • 1 cup of orzo pasta
  • 1 cup of crumbled feta cheese
  • 1/4 cup of freshly squeezed lemon juice
  • 2 tablespoons of olive oil
  • 3 cups of vegetable broth
  • 2 cloves of minced garlic
  • 2 tablespoons of chopped fresh dill
  • Salt and pepper to taste

  • In a large pan, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through.

  • Pour in the vegetable broth and lemon juice. Bring to a gentle boil, then reduce heat and let the orzo simmer for about 10-12 minutes or until cooked al dente.
  • Remove from heat and stir in the crumbled feta and fresh dill.
  • Slice the rested chicken and arrange atop the orzo mixture. Drizzle with extra lemon juice and garnish with additional dill if desired.
