4 pieces (about 1.5 lbs) of boneless chicken breasts
1 cup of orzo pasta
1 cup of crumbled feta cheese
1/4 cup of freshly squeezed lemon juice
2 tablespoons of olive oil
3 cups of vegetable broth
2 cloves of minced garlic
2 tablespoons of chopped fresh dill
Salt and pepper to taste
Instructions
Season the chicken breasts generously with salt and pepper.
In a large pan, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5-7 minutes on each side until golden brown and cooked through.
Lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Stir in the orzo, coating it with oil and garlic.
Pour in the vegetable broth and lemon juice. Bring to a gentle boil, then reduce heat and let the orzo simmer for about 10-12 minutes or until cooked al dente.
Remove from heat and stir in the crumbled feta and fresh dill.
Slice the rested chicken and arrange atop the orzo mixture. Drizzle with extra lemon juice and garnish with additional dill if desired.
