2 cups of fresh spinach, chopped
6 large eggs
1 cup of cheddar cheese, shredded
1/4 cup of milk
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 tablespoon of olive oil
Preheat your oven to 350°F (175°C).
In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for about 3-4 minutes until wilted.
In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Add the sautéed spinach and shredded cheese to the egg mixture. Stir well to combine.
Grease a muffin tin with olive oil or use silicone molds. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
Bake in the preheated oven for 15-18 minutes or until the egg bites are set and lightly golden.
