20 jumbo pasta shells
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
2 cups marinara sauce
1 teaspoon garlic powder
Salt and pepper, to taste
1 cup shredded mozzarella cheese
1 tablespoon olive oil
Instructions
In a large skillet, heat the olive oil over medium heat. Add the chopped spinach, cooking until wilted.
In a mixing bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well blended.
Bring a large pot of salted water to a boil.
Add the jumbo shells and cook according to the package instructions, usually about 8-10 minutes, until al dente. Drain and rinse under cold water to stop the cooking process.
Preheat your oven to 375°F (190°C).
Spread about 1/2 cup of marinara sauce on the bottom of a baking dish.
Using a spoon, carefully stuff each cooked shell with the spinach and ricotta mixture.
Place the filled shells in the baking dish in a single layer, open side up.
Pour the remaining marinara sauce over the stuffed shells.
Sprinkle the shredded mozzarella cheese over the top.
Cover the baking dish with aluminum foil and bake for 25 minutes.
Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
