1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
½ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
½ cup vegetable oil (or substitute with unsweetened applesauce for a lighter option)
1 teaspoon vanilla extract
½ cup walnuts or pecans, chopped (optional)
1 cup chocolate chips (optional, but highly recommended!)
Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
Grate the zucchini using a box grater or food processor and squeeze out the excess moisture.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
In another bowl, mix the granulated sugar, brown sugar, eggs, oil, and vanilla extract until combined.
Gradually fold the wet mixture into the dry ingredients, stirring gently. Then fold in the grated zucchini, nuts, and chocolate chips if using.
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
