  • 4 large Bell peppers
  • 1 pound Boneless, skinless chicken breast
  • 2 tablespoons Fajita seasoning
  • 2 tablespoons Olive oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can (15 oz) Diced tomatoes
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 1/4 cup Cilantro, chopped
  • 1 Lime juice from 1 lime

  • Instructions

  • Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
  • In a skillet, heat the olive oil, sauté the diced onion and garlic until onion is translucent. Add the chicken and fajita seasoning. Cook until no longer pink.
  • Add diced tomatoes and cilantro to the chicken mixture. Mix and simmer for an additional 5 minutes.
  • Spoon the chicken mixture into each bell pepper and place them in a baking dish.
  • Top each pepper with shredded cheese, cover with foil, and bake for 25 minutes. Remove foil and bake until cheese is bubbly.
  • Let peppers cool for a few minutes, drizzle with fresh lime juice, and serve.
