4 large Bell peppers
1 pound Boneless, skinless chicken breast
2 tablespoons Fajita seasoning
2 tablespoons Olive oil
1 medium Onion, diced
2 cloves Garlic, minced
1 can (15 oz) Diced tomatoes
1 cup Shredded cheese (cheddar or Mexican blend)
1/4 cup Cilantro, chopped
1 Lime juice from 1 lime
Instructions
Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes.
In a skillet, heat the olive oil, sauté the diced onion and garlic until onion is translucent. Add the chicken and fajita seasoning. Cook until no longer pink.
Add diced tomatoes and cilantro to the chicken mixture. Mix and simmer for an additional 5 minutes.
Spoon the chicken mixture into each bell pepper and place them in a baking dish.
Top each pepper with shredded cheese, cover with foil, and bake for 25 minutes. Remove foil and bake until cheese is bubbly.
Let peppers cool for a few minutes, drizzle with fresh lime juice, and serve.
