12 large jalapeños, halved and seeds removed
1 pound shrimp, peeled and deveined
1 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1 tablespoon Cajun seasoning (store-bought or homemade)
2 cloves garlic, minced
1 tablespoon olive oil
1/4 cup green onions, chopped
Salt and pepper to taste
1/2 cup breadcrumbs (optional for topping)
Instructions
Preheat your oven to 375°F (190°C). Halve the jalapeños and scoop out the seeds.
In a skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Add the shrimp and Cajun seasoning, cooking until shrimp turn pink.
In a mixing bowl, combine the cooked shrimp, cream cheese, shredded cheddar, green onions, salt, and pepper; mix to create the filling.
Fill each jalapeño half with the shrimp mixture and sprinkle breadcrumbs on top if desired.
Bake in the preheated oven for 20 minutes or until the jalapeños are tender and the top is golden brown.
