4 boneless, skinless chicken breasts
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1 clove garlic, minced
1 teaspoon lemon zest
Salt and pepper, to taste
2 tablespoons olive oil
1/2 teaspoon Italian seasoning
Instructions
In a medium bowl, combine ricotta cheese, Parmesan cheese, chopped basil, chopped parsley, minced garlic, and lemon zest. Mix well and season with salt and pepper to taste.
With a sharp knife, carefully butterfly each chicken breast. Open them like a book without cutting all the way through.
Spoon a generous amount of the ricotta mixture into the center of each chicken breast. Fold the chicken closed, and secure it with toothpicks or kitchen twine.
In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the stuffed chicken rolls and sear them for about 4-5 minutes on each side until golden brown.
Once seared, transfer the skillet to a preheated oven at 375°F (190°C) and bake for about 20 minutes until the chicken is cooked through (internal temperature should reach 165°F or 75°C). Remove from the oven and let it rest for a few minutes before slicing.
Carefully slice the chicken rolls, display them on a platter, and drizzle with a little extra olive oil if desired.
