  • 2 tbsp all-purpose flour
  • 2 tsp ground cinnamon
  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

  • Instructions

  • Preheat your oven to 325°F (163°C). Mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create a solid crust.
  • In a small bowl, combine the brown sugar and ground cinnamon. Mix well and set aside for later use in creating swirls in your cheesecake.
  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and vanilla extract, mixing until combined. Incorporate the eggs one at a time, ensuring each one is fully blended before adding the next. Then, mix in the sour cream, flour, and ground cinnamon until the batter is smooth and fluffy.
  • Pour half of the cheesecake batter over the crust. Sprinkle half of the cinnamon filling on top, swirling it gently with a knife or toothpick. Pour the remaining cheesecake batter on top and finish with the remaining cinnamon filling, creating beautiful swirls for that signature cinnamon roll look.
  • Bake the cheesecake in the preheated oven for approximately 50 minutes or until the edges are set and the center has a slight jiggle. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Once cooled, refrigerate for at least 4 hours, preferably overnight, to set completely.
  • As the cheesecake chills, whip up the frosting by mixing powdered sugar, milk, and vanilla extract until smooth. Drizzle this creamy topping over the chilled cheesecake just before serving.
