2 tsp ground cinnamon
½ cup brown sugar, packed
2 tsp ground cinnamon
¼ cup unsalted butter, softened
1 cup powdered sugar
2 tbsp milk
1 tsp vanilla extract
Instructions
Preheat your oven to 325°F (163°C). Mix the graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create a solid crust.
In a small bowl, combine the brown sugar and ground cinnamon. Mix well and set aside for later use in creating swirls in your cheesecake.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the granulated sugar and vanilla extract, mixing until combined. Incorporate the eggs one at a time, ensuring each one is fully blended before adding the next. Then, mix in the sour cream, flour, and ground cinnamon until the batter is smooth and fluffy.
Pour half of the cheesecake batter over the crust. Sprinkle half of the cinnamon filling on top, swirling it gently with a knife or toothpick. Pour the remaining cheesecake batter on top and finish with the remaining cinnamon filling, creating beautiful swirls for that signature cinnamon roll look.
Bake the cheesecake in the preheated oven for approximately 50 minutes or until the edges are set and the center has a slight jiggle.
