4 cups of all-purpose flour
1 ½ cups of warm water
2 teaspoons of active dry yeast
¼ cup of olive oil (plus extra for drizzling)
2 teaspoons of salt
1 teaspoon of granulated sugar
2 tablespoons of chopped fresh rosemary
1 can (15 oz) of crushed tomatoes
2 cups of shredded mozzarella cheese
½ cup of Parmesan cheese (optional)
Fresh basil leaves (for garnish, to taste)
Instructions
In a large bowl, combine warm water, sugar, and yeast. Let it rest for about 5-10 minutes until frothy.
Stir in the flour, salt, and olive oil until a shaggy dough forms. Transfer to a well-floured surface and knead for about 5-7 minutes until smooth and elastic.
Lightly oil a bowl and place the dough inside, covering it with a damp cloth. Let it rise in a warm place for about 30 minutes or until doubled in size.
Punch down the dough to release air bubbles. Transfer the dough to a greased baking sheet or cast-iron skillet and stretch it out while pressing it into the corners.
Spread crushed tomatoes evenly over the dough and sprinkle with salt and pepper. Add shredded mozzarella cheese, drizzle with olive oil, and scatter fresh rosemary on top.
Cover the topped dough again and let it rise for another 15-20 minutes.
Preheat your oven to 425°F (220°C). Bake the Focaccia Pizza for about 30-35 minutes, or until the cheese is bubbly and the crust is golden brown.
Sprinkle fresh basil leaves on top after baking and let it cool for a few minutes before slicing and serving.
