3–4 lbs of boneless beef chuck roast
4 cups of beef broth
1 large onion, sliced
4 garlic cloves, minced
2 tbsp of Worcestershire sauce
1–2 French baguettes, sliced
8 slices of Swiss cheese
Salt and pepper to taste
Start by seasoning your boneless beef chuck roast generously with salt and pepper. Let it sit at room temperature for 30 minutes if preferred.
In a large skillet or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the roast on all sides until browned.
Add the sliced onions, minced garlic, and Worcestershire sauce to the skillet and sauté until onions are translucent.
Transfer the seared roast with the onion mixture into a slow cooker or return it to the Dutch oven. Pour the beef broth over the meat.
If using a slow cooker, cook on low for 7-8 hours or high for 4-5 hours. You can also simmer on the stovetop on low heat for the same duration.
When the beef is done cooking, remove it and let it rest. Shred the meat into bite-sized pieces using two forks.
Slice the French baguette, toast the insides if desired. Pile in the shredded beef, top with Swiss cheese, and broil until cheese is melty and bubbly.
