3 to 4 pounds of chuck roast
2 large onions, thinly sliced
4 cloves of garlic, minced
2 cups of beef broth
1 cup of dry white wine (or substitute with more beef broth)
2 tablespoons of balsamic vinegar
1 tablespoon of olive oil
4 sprigs of fresh thyme (or 1 teaspoon dried thyme)
Salt and pepper to taste
8 slices of Swiss cheese (for serving)
Chopped parsley for garnish
Instructions
Step 1: Sear the Roast – Heat a large skillet or Dutch oven over medium-high heat. Add olive oil. Season the chuck roast generously with salt and pepper, then place it in the skillet. Sear each side for about 4-5 minutes until golden brown.
Step 2: Sauté the Onions – Remove the roast from the skillet and set aside. In the same skillet, add the sliced onions. Sauté for around 10-12 minutes, stirring frequently, until they are tender and golden brown. Add the minced garlic and continue to sauté for an additional minute.
Step 3: Combine Ingredients – Return the roast to the skillet or Dutch oven, and pour in the beef broth, white wine, and balsamic vinegar. Toss in the fresh thyme and give everything a gentle stir to combine.
Step 4: Slow Cook – Cover the pot with a lid and reduce the heat to low. Let it simmer for about 3 hours, occasionally checking to ensure it doesn’t dry out.
