1 bunch (approximately 1 lb) of fresh asparagus
1 cup, halved of cherry tomatoes
1 small, thinly sliced of red onion
½ cup, crumbled of feta cheese
3 tbsp of olive oil
2 tbsp of balsamic vinegar
To taste of salt and pepper
¼ cup, chopped of fresh basil
Instructions
Step 1: Prepare the Asparagus – Wash the asparagus under cold water. Snap off the woody ends and cut the stalks into 2-inch pieces.
Step 2: Blanch the Asparagus – Bring salted water to a boil, add asparagus, and blanch for 2-3 minutes. Drain and transfer to ice water.
Step 3: Prepare the Other Ingredients – Slice cherry tomatoes, thinly slice red onion, and chop basil. Crumble feta cheese if using.
Step 4: Combine Ingredients – In a mixing bowl, combine blanched asparagus, cherry tomatoes, red onion, and basil. Drizzle with olive oil and balsamic vinegar, season with salt and pepper, and toss gently.
Step 5: Serve and Enjoy – Transfer to a serving dish or keep in the bowl for meal prepping. Add feta cheese just before serving.
