  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely chopped
  • 1 bell pepper (any color), diced
  • ¼ cup fresh parsley, chopped
  • ½ cup feta cheese, crumbled (optional)
  • ½ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • Salt and black pepper to taste

  • Instructions

  • Begin by bringing a large pot of salted water to boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  • While the pasta cools, chop the cucumber, cherry tomatoes, red onion, and bell pepper into bite-sized pieces.
  • In a large bowl, combine the cooled pasta, diced cucumber, halved cherry tomatoes, chopped red onion, bell pepper, and parsley. If you’re using feta cheese, add it now.
  • In a separate bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until well blended.
  • Pour the dressing over the pasta salad and toss everything gently until well combined. Taste and adjust the seasoning if necessary. Chill the salad in the refrigerator for at least 15 minutes before serving.
