  • 24 pieces of ladyfinger cookies
  • 1 cup of strong brewed coffee
  • 2 tablespoons of cocoa powder
  • 1 teaspoon of vanilla extract

  • Instructions

  • Start by brewing a strong cup of coffee. Let it cool to room temperature.
  • In a large mixing bowl, whip the heavy cream until soft peaks form.
  • In another bowl, mix the mascarpone cheese, confectioners’ sugar, and vanilla extract until smooth.
  • Gently fold the whipped cream into the mascarpone mixture.
  • Dip each ladyfinger into the cooled coffee for about 1-2 seconds. Arrange a layer of soaked ladyfingers at the bottom of your serving dish and spread half of the mascarpone mixture on top, followed by half of the fresh raspberries.
  • Repeat the layering process with another layer of soaked ladyfingers, remaining mascarpone mixture, and raspberries.
  • Cover the dish with plastic wrap and refrigerate for at least 1 hour.
