2 cups of fresh raspberries
1 cup of mascarpone cheese
1 cup of heavy cream
½ cup of confectioners’ sugar
24 pieces of ladyfinger cookies
1 cup of strong brewed coffee
2 tablespoons of cocoa powder
1 teaspoon of vanilla extract
Instructions
Start by brewing a strong cup of coffee. Let it cool to room temperature.
In a large mixing bowl, whip the heavy cream until soft peaks form.
In another bowl, mix the mascarpone cheese, confectioners’ sugar, and vanilla extract until smooth.
Gently fold the whipped cream into the mascarpone mixture.
Dip each ladyfinger into the cooled coffee for about 1-2 seconds. Arrange a layer of soaked ladyfingers at the bottom of your serving dish and spread half of the mascarpone mixture on top, followed by half of the fresh raspberries.
Repeat the layering process with another layer of soaked ladyfingers, remaining mascarpone mixture, and raspberries.
Cover the dish with plastic wrap and refrigerate for at least 1 hour.
