2 lobster tails (6–8 oz each)
1/2 cup (1 stick) of butter
4 cloves of garlic, minced
1 lemon, juiced
2 tablespoons of chopped parsley
salt and pepper to taste
Instructions
Preheat your oven to 425°F (220°C).
Using kitchen scissors, carefully cut the top shell of the lobster tails lengthwise, stopping just before the tail fin.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Add lemon juice, chopped parsley, and season with salt and pepper.
Using a pastry brush, generously coat the lobster meat with the garlic butter mixture, reserving some for basting during cooking.
