8 oz lo mein noodles (or any preferred noodles)
1 lb chicken breast, thinly sliced
3 cloves garlic, minced
1 cup bell peppers, sliced (any color)
1 cup broccoli florets
1 cup snap peas
¼ cup soy sauce (or tamari for gluten-free)
2 tbsp oyster sauce
1 tbsp sesame oil
2 tbsp vegetable oil (for sautéing)
Salt and pepper to taste
Sesame seeds (for garnishing, optional)
Instructions
Cook the lo mein noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set them aside.
In a large skillet or wok, heat 1 tbsp of vegetable oil over medium-high heat. Add the sliced chicken and cook until golden brown and no longer pink in the center, about 5-7 minutes. Season with a pinch of salt and pepper.
To the chicken, add the minced garlic, bell peppers, broccoli, and snap peas. Sauté for 4-5 minutes until the veggies are tender-crisp.
Add the cooked noodles, soy sauce, oyster sauce, and sesame oil to the skillet. Toss everything together until the noodles are coated, about 2-3 minutes. Adjust seasoning if necessary.
