1 cup chicken broth (or vegetable broth for a vegetarian option)
1/2 cup grated Parmesan cheese
1/4 cup unsalted butter, melted
4 cloves garlic, minced (more for garlic lovers!)
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Begin by seasoning the chicken breasts with salt, pepper, and Italian seasoning.
Place the halved baby potatoes at the bottom of your crockpot. Lay the seasoned chicken breasts on top.
In a small bowl, mix together the melted butter, minced garlic, chicken broth, and half of the Parmesan cheese. Pour this mixture over the chicken and potatoes, ensuring everything is well coated.
Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
About 30 minutes before serving, sprinkle the remaining Parmesan cheese over the top. Cover and let it melt into the dish.
