2 pounds of baby potatoes
6 cloves of minced garlic
1 cup of grated Parmesan cheese
1/4 cup of olive oil
2 tablespoons of chopped fresh parsley
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
Begin by washing the baby potatoes thoroughly to remove any dirt. Place them in a large pot and cover with water. Add a pinch of salt to the water. Bring to a boil and cook for about 15-20 minutes until the potatoes are tender but not mushy.
Preheat your oven to 425°F (220°C) for crispy smashed potatoes.
Once the potatoes are cooked, drain them and let them cool for a few minutes. Smash each potato into a flat disc about 1 to 1.5 inches thick.
