4 ripe plantains, green or yellow, based on preference
6 cloves garlic, minced
1 small onion, diced
1/2 cup chicken broth (or vegetable broth for a vegetarian option)
1/4 cup olive oil (substitutable with coconut oil for a tropical twist)
Salt and pepper to taste
Fresh cilantro for garnish

Instructions
Peel the plantains and cut them into 1-inch pieces. Heat the olive oil over medium heat in a deep pan and fry the plantains until golden brown, about 3–5 minutes per side. Remove them and set aside.
In the same pan, add more olive oil if needed. Sauté minced garlic and diced onion until fragrant and translucent, about 2–3 minutes. Add shrimp and cook for about 5 minutes until pink. Pour in chicken broth and let it simmer. Season with salt and pepper.
Mash the fried plantains using a mortar and pestle or a sturdy bowl until smooth and creamy. Mix some shrimp mixture with the plantains to incorporate flavors.
Shape the mashed plantains into a dome on a plate or in a bowl. Top it with the garlic shrimp mixture. Drizzle any remaining broth over the top and garnish with fresh cilantro.
