  • 1 small onion, diced

  • 1/4 cup olive oil (substitutable with coconut oil for a tropical twist)
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Optional: lime wedges for serving

  • Instructions

  • Peel the plantains and cut them into 1-inch pieces. Heat the olive oil over medium heat in a deep pan and fry the plantains until golden brown, about 3–5 minutes per side. Remove them and set aside.
  • In the same pan, add more olive oil if needed. Sauté minced garlic and diced onion until fragrant and translucent, about 2–3 minutes. Add shrimp and cook for about 5 minutes until pink. Pour in chicken broth and let it simmer. Season with salt and pepper.
  • Mash the fried plantains using a mortar and pestle or a sturdy bowl until smooth and creamy. Mix some shrimp mixture with the plantains to incorporate flavors.
  • Shape the mashed plantains into a dome on a plate or in a bowl. Top it with the garlic shrimp mixture. Drizzle any remaining broth over the top and garnish with fresh cilantro.
