1 pound of ribeye steak (or sirloin for a leaner option)
3 tablespoons of olive oil
4 cloves of garlic, minced
1 teaspoon of red pepper flakes (optional, for heat)
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Grated Parmesan cheese, for serving (optional)
Instructions
Cook the spaghetti according to package instructions in a large pot of salted boiling water. Reserve 1/2 cup of pasta water before draining.
Season the steak generously with salt and black pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the steak and sear for 4-5 minutes on each side for medium-rare doneness. Once cooked, let it rest for around 5 minutes before slicing it thinly against the grain.
In the same skillet, add the remaining tablespoon of olive oil. Lower the heat to medium and add the minced garlic and red pepper flakes. Sauté for 1-2 minutes, just until the garlic is fragrant but not browned.
Add the cooked spaghetti to the skillet, tossing it with the garlic, ensuring every strand is coated. Gradually incorporate the reserved pasta water until you reach your desired sauce consistency.
Fold the sliced steak into the pasta, mixing well. Adjust seasoning with salt and pepper to taste.
