Instructions
In a small bowl, combine 3 tablespoons of water with 1 tablespoon of gelatin powder. Allow it to bloom for 5-10 minutes.
In a saucepan over medium heat, warm 1 cup of fresh pomegranate juice. Add 1/2 cup of sugar while stirring until dissolved, then remove from heat once it comes to a gentle boil.
Stir the bloomed gelatin into the warm pomegranate mixture until fully dissolved, and let it cool slightly.
In a large mixing bowl, whip 2 cups of heavy cream until soft peaks form.
Gently fold the cooled pomegranate mixture into the whipped cream using a rubber spatula, maintaining the airy texture.
Pour the mousse into silicone dome molds, filling each about three-quarters full. Tap gently on the counter to remove air bubbles and cover with plastic wrap. Refrigerate for at least 1 hour.
Melt 4 ounces of dark chocolate in a double boiler or microwave, being careful not to burn it. Allow it to cool slightly.
Once the mousse has set, carefully unmold each dome and dip them into the melted chocolate, ensuring even coating on all sides. Let excess chocolate drip off and place on parchment paper to set.
