4 slices of artisan bread (like sourdough or ciabatta)
8 ounces of Brie cheese, sliced
2 ripe peaches, sliced thinly
2 tablespoons of unsalted butter
2 tablespoons of brown sugar (or honey for a lighter option)
A pinch of cinnamon (optional)
Fresh mint leaves for garnish (optional)
Salt and pepper to taste
Instructions
Heat a non-stick skillet over medium heat. Melt 1 tablespoon of unsalted butter and add the sliced peaches. Sprinkle the brown sugar over the peaches and cook for about 5 minutes until softened and caramelized.
Butter one side of each slice of bread. Lay two slices, butter-side down, on a surface. Layer with Brie cheese and caramelized peaches, and season with salt and pepper. Top with remaining slices of bread, butter-side up.
Grill the sandwiches in the same skillet over medium-low heat for about 4-5 minutes on each side until golden brown and melty.
Remove from skillet, let cool for a minute, garnish with mint leaves, slice and serve immediately.
