4 pieces (about 2 lbs) of bone-in, skin-on chicken thighs
1 cup of fresh parsley, finely chopped
2 tablespoons of fresh oregano, finely chopped
4 cloves of garlic, minced
1/3 cup of red wine vinegar
1/2 cup of olive oil
1 teaspoon of crushed red pepper flakes
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
In a medium bowl, combine the finely chopped parsley, oregano, minced garlic, red wine vinegar, and olive oil. Stir well until the herbs are fully incorporated into the liquid.
Place the chicken thighs into a large resealable plastic bag or a shallow bowl. Pour the chimichurri marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the bowl and refrigerate for at least 30 minutes, preferably up to 2 hours.
Preheat your grill to medium-high heat, around 400°F (204°C). Clean the grill grates and grease them lightly with oil.
Remove the chicken from the marinade, letting any excess drip off. Season with salt and pepper, then place the chicken skin-side down on the grill. Grill for about 5-7 minutes.
After 5-7 minutes, flip the chicken thighs over and continue to grill for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C).
Remove the chicken from the grill and let it rest for at least 5 minutes before serving with remaining chimichurri sauce drizzled on top.
