1.5 pounds of flank steak
1 pint of cherry tomatoes, halved
8 ounces of fresh mozzarella, diced
1 cup of fresh basil leaves, torn
1/3 cup of balsamic vinegar
1/4 cup of olive oil
1 tablespoon of honey
2 cloves of garlic, minced
Salt to taste
Pepper to taste
Instructions
Marinate the flank steak by whisking together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper. Place steak in a resealable bag, pour marinade over, and refrigerate for at least 30 minutes.
Prepare the Caprese salad by combining halved cherry tomatoes, diced mozzarella, and torn basil leaves in a bowl. Drizzle with olive oil, season with salt and pepper, and toss gently.
