1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) diced tomatoes
1 can (6 ounces) tomato paste
1 onion, chopped
2 cloves garlic, minced
2 tablespoons chili powder
1 teaspoon ground cumin
Salt and pepper, to taste
1 bell pepper, chopped (optional)
1 can (15 ounces) corn, drained (optional)
Shredded cheese, for topping (optional)
Fresh cilantro, for garnish (optional)
Instructions
Brown the Ground Beef – Heat a large pot over medium heat, add the ground beef and break it up. Cook until browned (5–7 minutes), and drain excess fat.
Add Vegetables and Spices – Add chopped onion, bell pepper (if using), and minced garlic to the pot. Sauté until soft (3–4 minutes), then stir in chili powder, cumin, salt, and pepper.
Incorporate Beans and Tomatoes – Add kidney beans, diced tomatoes (with juice), and tomato paste. Stir to combine.
Adjust Thickness – Simmer uncovered to thicken, or add water for a thinner chili.
Simmer – Bring to a boil, then reduce to low, cover, and let it simmer for 20–30 minutes.
Taste and Adjust – Before serving, taste and adjust seasonings as necessary.
