1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk (or almond milk for dairy-free option)
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup raspberry jam or strawberry jam for a blood-like effect
2 cups buttercream frosting (store-bought or homemade)
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk it well until it’s light and fluffy.
In another bowl, mix together the buttermilk, vegetable oil, eggs, and vanilla extract. Blend until smooth, then gradually add this mixture to your dry ingredients, stirring until just combined.
Fill each cupcake liner about two-thirds full with the batter and bake in your preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool for a few minutes before transferring them to a wire rack.
Once the cupcakes are completely cooled, cut a small cone shape from the top of each cupcake. Remove the cone, and spoon or pipe raspberry or strawberry jam into the center of each cupcake.
Use a piping bag fitted with a star tip to frost the cupcakes with buttercream frosting, creating swirls. Add red food coloring to enhance the ‘vampire bite’ effect.
