1 medium onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves of garlic, minced
8 cups low-sodium chicken broth
2 cups shredded cooked chicken (roast chicken works well)
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
8 ounces egg noodles
Fresh parsley for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5–7 minutes or until the vegetables are tender.
Stir in the minced garlic, dried thyme, and oregano. Cook for another minute until fragrant.
Carefully pour in the chicken broth, stirring to combine. Bring the mixture to a boil.

In a separate pot, cook the egg noodles according to package instructions. Drain and set aside.
