2 medium of Sweet Potatoes, peeled and cubed
2 tablespoons of Olive Oil
1 of Yellow Onion, diced
3 cloves of Garlic, minced
1 of Bell Pepper, diced
2 cups of Spinach, fresh
1 tablespoon of Italian Seasoning
To taste of Salt
To taste of Black Pepper
Instructions
Step 1: Preheat your oven to 400°F (200°C).
Step 2: Mash the sweet potatoes lightly if you prefer them softer.
