2 medium sweet potatoes, diced

1 bell pepper, diced
2 cups of fresh spinach

1 cup of shredded cheese (optional)
Instructions
Preheat your oven to 400°F (200°C).
Peel and dice your sweet potatoes into bite-sized cubes.
In a skillet, heat olive oil over medium heat. Add diced onions and bell peppers, and sauté for about 5-7 minutes until softened. Stir in minced garlic and continue to sauté for another minute.
