Ingredients

Scale
  • 12 oz of Pappardelle pasta
  • 8 oz of Portobello mushrooms, sliced
  • 2 tablespoons of Olive oil
  • 3 cloves of Garlic, minced
  • 1 cup of Vegetable broth
  • 1/2 cup of Heavy cream
  • 1/4 cup of Parmesan cheese, grated
  • 2 tablespoons of Fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

  • Instructions

  • Begin by bringing a large pot of salted water to a roaring boil. Add the pappardelle and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about 1/2 cup of pasta water.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced Portobello mushrooms and sauté for about 5-7 minutes, or until they release their juices and turn golden brown.
  • Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant. Season with salt and pepper to taste.
  • Pour in the vegetable broth and bring to a gentle simmer. Let it cook for about 5 minutes, then reduce the heat and add the heavy cream, stirring until combined.
  • Add the drained pappardelle to the skillet and toss gently until thoroughly coated. If the sauce is too thick, add reserved pasta water to achieve desired consistency.
  • Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Serve immediately.
