12 oz of Pappardelle pasta
8 oz of Portobello mushrooms, sliced
2 tablespoons of Olive oil
3 cloves of Garlic, minced
1 cup of Vegetable broth
1/2 cup of Heavy cream
1/4 cup of Parmesan cheese, grated
2 tablespoons of Fresh parsley, chopped
Salt to taste
Pepper to taste
Instructions
Begin by bringing a large pot of salted water to a roaring boil. Add the pappardelle and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about 1/2 cup of pasta water.
In a large skillet, heat the olive oil over medium heat. Add the sliced Portobello mushrooms and sauté for about 5-7 minutes, or until they release their juices and turn golden brown.
Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant. Season with salt and pepper to taste.
Pour in the vegetable broth and bring to a gentle simmer. Let it cook for about 5 minutes, then reduce the heat and add the heavy cream, stirring until combined.
Add the drained pappardelle to the skillet and toss gently until thoroughly coated. If the sauce is too thick, add reserved pasta water to achieve desired consistency.
Remove from heat and stir in the grated Parmesan cheese and chopped parsley. Serve immediately.
