Instructions
Start by heating the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Next, add your chopped fresh tomatoes or canned tomatoes, followed by the vegetable broth. Stir in the dried basil, salt, and pepper to taste. Bring the mixture to a gentle simmer and let it cook for about 20 minutes.
