Ingredients

1 cup of green lentils
2 cups of sliced mushrooms (cremini or button)
2 medium carrots, diced
1 large onion, chopped
4 cloves of garlic, minced
4 cups of vegetable broth
14 oz. of tomatoes (canned or fresh)
2 cups of chopped spinach or kale
2 tablespoons of olive oil
2 bay leaves
Salt and pepper to taste
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Toss in the garlic and cook for an additional minute.
Introduce the sliced mushrooms and diced carrots to the pot. Stir occasionally for about 5-7 minutes.
Add the green lentils and pour in the vegetable broth. Stir well.
Add the tomatoes, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
After 45 minutes, stir in the spinach (or kale) and cook for an additional 10 minutes.
Remove bay leaves before serving. Ladle the stew into bowls and enjoy!
