Ingredients

  • 1 cup of green lentils
  • 2 cups of sliced mushrooms (cremini or button)
  • 2 medium carrots, diced
  • 1 large onion, chopped
  • 4 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 14 oz. of tomatoes (canned or fresh)
  • 2 cups of chopped spinach or kale
  • 2 tablespoons of olive oil
  • 2 bay leaves
  • Salt and pepper to taste

  • Instructions

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Toss in the garlic and cook for an additional minute.
  • Introduce the sliced mushrooms and diced carrots to the pot. Stir occasionally for about 5-7 minutes.
  • Add the green lentils and pour in the vegetable broth. Stir well.
  • Add the tomatoes, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • After 45 minutes, stir in the spinach (or kale) and cook for an additional 10 minutes.
  • Remove bay leaves before serving. Ladle the stew into bowls and enjoy!
